I don't really have a recipe but I wanted to share one of my favorite ways to prepare salmon for breakfast.

I like my fillet portions to cook evenly so I remove the belly meat of the fish and save it for later.

It starts with two tasty/crusty pieces of bread, toasted and lightly buttered. Sometimes I butter and grill in the pan, if I'm feeling extra fancy. I used an artisan style loaf from the Safeway bakery. Potato-Rosemary is super good.

On top of the toast is a nice portion of scrambled eggs. I like my eggs creamy and velvety, so I work the eggs constantly over low heat. Season at the end and fold in some fresh herbs. Dill or chives are best.

The belly meat is cut into two pieces, seasoned with a little salt and pepper. Pan seared in olive oil and finished off in butter. Make sure the skin is super crispy!

Plate and serve.

It's such a simple dish but looks super elegant.
 
I call it a Fancy Fisherman's Breakfast.

You know what sounds good that I might have to try!? Smoked salmon hash instead of corned beef hash! Could possibly be amazing!

Somehow, that egg mcmuffin sandwich I just had doesn't seem very goof... bummer.

Looks awesome!!!!  Need to eat fish early more often.  Growing up we had a piece of salted red salmon virtually every day.
