So I used to make this back in Pennsylvania growing up,  I haven't really trout fished since then but I picked up a few nice fish yesterday so I figured id make it.  Normally I would grill it but that wasn't really an option tonight so I baked it.  Also I would leave the heads on but these were a little bigger than what I've cooked before.  Here is what you need;
Trout(duh)
Bacon
Green onions
Butter
Salt
Pepper
Lemon pepper
Butchers twine
Take your whole trout, put slashes on each side, put salt pepper and lemon pepper on it.
 Lay three pieces of butchers twine on a tray,  lay three pieces if bacon on it, place fish on top.
Put as much butter as your conscience can handle inside the trouts body cavity,  if you leave your head on, shove two or three green onions down its throat into the body cavity.  It keeps them in better and I think it looks cool.
Put three more pieces of bacon on the top of the fish and tie the butchers twine. 
Grill(or bake) until the green onions caramelize and the bacon gets crispy and the bacony green oniony trout flavora all merge together,  it's Sooo good.

All the trout and steelhead from the ponds at the Sportsmen's Show went to soup kitchens across the city. I bet they weren't prepared like that though! Wow.
