Hey folks... I have tons of rock fish in my freezer and I need to eat it or get rid of it before too long... I need some more recipes.  What do you do that you like and is easy... healthy would be a bonus too... but not required.  The one limiter... I just don't deepfry fish.  TIA!!!

Rev, skin and debone the fillets and use the recipe below substituting rockfish for sturgeon to make a delicious blackened rockfish. I would sear it 4-5 minutes a side instead of 6-7 since your fillets are probably not as thick as the sturgeon I used.

Cedar Plank Ling Cod (can substitute rockfish)

-soak cedar plank for 2 hours
-sprinkle fish with sea salt, coarse ground pepper, Johnny's seasoning, minced garlic.
-preheat grill on medium heat
-spray cedar plank with olive oil
-let cedar plank sit on grill until it smokes
-set fish on plank with 2 pieces of quarter  inch slices of butter per filet. Cover butter with slice of lemon.
-cook for 15 minutes checking often.

My fish tacos are super easy. I don't have a recipe or anything. I just throw some ingredients in a zip lock bag and marinate the fish.I don't really measure out my ingredients either. It really depends on the amount of fish. You can add or omit whatever you like but this is what I do:
In a good sized zip lock bag add
Salt
Pepper
Cumin
Chili powder
Red pepper flakes(I like them spicy.)
Minced garlic
The juice from one lime
Olive oil (I use about a cup)
 You can adjust the blend of spices to your preference. I never measure anything so sorry if that makes things hard for you.
Anyway mix all ingredients well in the bag. Add the fish. You can coat your whole mess of fish pretty easily. I marinate at least thirty minutes prior to use. It does seem like the lime cooks the fish if you leave it to marinate over night but it still cooks fine for me.

While that marinates you can make my delicious cumin-lime slaw.
The easiest way is to get a ready bag of Cole slaw. I just toss or save the dressing that comes in the bag.
A cup or so of sour cream
Juice of one lime
Cumin to taste

Mix all ingredients in a bowl and let it chill.

For condiments I use what ever I have laying around.
Queso fresco is a must. I cut it in to strips.
Avocado
Peach or mango salsa is really good but this is all optional.
Finely chopped onion
Cilantro

I love these with small flour tortillas. Sometimes I just make them myself but it doesn't matter. Use whatever you like.

Back to the fish.
Fry in a hot pan. I find the oil in the marinade is enough to keep them from sticking to the pan. Cook through. Place on a warm tortilla, add your condiments and serve along side your favorite beer.

So that is what I do...all my friends say I should open a taco stand. Let me know if you end up trying this.

I've got some Ling thawing in the sink.  I was gonna do my standby, splash with sesame oil and soy sauce and cook in foil.  But I'm going with this fish taco recipe.

This is what I cooked last night, though I used some old arctic cod I found in the freezer.

Drizel olive oil on one side of the fillet.  Put that side down on aluminum foil (if grilling) or casserole dish (if baking).  Drizzel a little more olive oil on top.  LIGHTLY dust with ginger powder and cumin.  Dust to taste with garlic powder.  Sprinkle with thyme and sage.  Bake/grill uncovered until done.

Kids and (pregnant) wife all raved about it.

Real simple fish tacos.  The usual condiments.  make a foil boat that will cover the fish all the way, butter, garlic, fresh ground pepper, Johnny's and your favorite Mexican Hot sauce quantity to taste, all in the foil, throw the fillets on the foil, throw on a medium hot grill and cook for about 8 minutes (I like to flip it but you don't have too), you can do it in the oven but I like to cook it outside.  Dinner in 15 minutes.   Leave out the Mexican sauce and you have an entree that goes with whatever.  It's good!

Piccata Sauce

1 tablespoon butter
3 cloves garlic, minced
3 tablespoon olive oil
3 tablespoons flour
1 (14 1/2 ounce) can clear chicken broth
1 -3 tablespoon lemon juice
2 -4 tablespoons capers, with juice

Directions:
1. In saucepan, saute garlic in butter & olive oil until transparent.
2. Add  flour until thoroughly mixed.
3. Add chicken broth a little at a time, then add lemon juice.
4. Stir over medium heat until thickened.
5. Add capers with juice.

poor over poached fillets or any other way you want to cook them.

We are normally in an e so Ineed simplicity. I marinate in a Baggie using Italian dressing, olive oil, garlic powders ms lemon pepper for 1/2 hour orzo then cook a few minutes on the George Foreman grill then eat and get on down the road. Your recipes look great tho. Art

Thanks Lingling, This was tasty! I did it on Ling and Coho last night. Just a dash of chili oil (didn't have chili powder or flakes). I thought it was good on Ling, and awesome on Coho.
