I've been really craving fish and chips lately. What is your favorite type of fried fish batter? All recipes are welcomed if you don't mind sharing.

Pride of the West!

If I make my own I like a thin tempura like crispy coating. Use equal parts corn starch to flour (1/4 to 1/3C each), a tsp salt, tsp onion powder and beer. Batter should be a bit runny. Simple easy and delish! Great for onion rings too!

Don't forget... PEANUT OIL makes all the difference too!

Not a batter, but coat the fillet in flour, then egg, and then into finely crushed jalapeño potato chips. Pan fried in butter is delicious and so is deep frying.
Relax. You'll live longer.

Both of these sound delicious. I would om the nom out of jalapeño chip fried fish.

I either fry fish dipped in pride of the west or panko bread crumbs.  Depends on texture I am wanting that day.

I make a variant of the one suggested by Browneyes.  I use seasoned salt and a heavy dark beer or ale.  The trick with fish is not to overcook it.  The proper cook is to get it to JUST flake...anymore than that its dry, chewy and overcooked.  Serve with a tartar sauce of mayo, finely minced kosher dill pickle, finely minced onion, and a dab of brown sugar.

I have been using a 50/50 mix of McCormicks beer batter and Pride of the West. It works better than either used by themselves. I use beer, of course!

So... Does it matter what kind of beer? I don't like or drink beer (it's the alcohol)... So I'm not sure what might be good.

I used a store bought tempura batter and some Blue Moon. It was pretty good. The breading was a lot like you get from fried shrimp at a chinese joint.

Since lings and rocks are white and flakey,why not cornmeal like catfish?I might have to try it next time

I've never had fish and chips in the U.S. like those you can get in just about any fish-n-chip shop in Scotland and/or England. Anyone that could reproduce anything like those would be on to something.
