What to do with the left over salmon (or other flakey fish) from the party or last night’s dinner?

Try this; flake the fish into a bowl, add a generous amount of sweet pickle relish with its juice, chopped onions (or shallots), chopped celery, salt and pepper (if needed) and smooth it all out with real Mayonnaise to complete the dish.

Salmon Salad is great piled on butter lettuce with tomato slices (pictured) for a first course at a sit down dinner, or if you would like to make this into a dip, use avocado instead of mayo; you’ll find it goes well with party crackers or corn chips. Put a generous amount of your Salmon Salad on celery sticks for party hors d'oeuvres. Make a Salmon Salad sandwich. Any way you serve it this is an easy and great way to get compliments from left overs.

Experiment; this is a very customizable treat. Create a lower calorie version using yogurt (add a little fresh squeezed lemon juice for kick) instead of Mayo or less mayo and add some EVOO (Extra Virgin Olive Oil) for a smoother spreading salad.

You could make it even more heart healthy by using avocado instead of the mayo or add diced apples, raisins, diced cucumbers or other crunchy vegetables.

Don’t forget your favorite spices; curry, rubbed sage, or if you like it spicy, try a little chili powder.

As most will realize; Salmon Salad this is a variation of tuna or chicken salad however, the flavor of salmon does something unique which makes this dish very appetizing to even those who say they don’t care for fish.

P.s. the dark drizzles on my Salmon Salad are Trader Joes Balsamic Glaze. It comes in an 8.5 fluid ounce bottle and is basically balsamic vinegar that’s thickened and sweetened. Since not everyone loves it like I do I leave it on the table as a condiment to be added if desired.

Hmm, not familiar with this concept you mention, "left over salmon"... ???  Don't believe I've ever seen such a thing!

I am not familiar with this concept called salad.  However, if that is one of these "salad" things, I can totally see myself trying that one.
