Went to check out flatfish fishing with Cody yesterday at Steilacoom, WA. The day turned out to be much better than forecast. Fishing was constant and we each just kept a handful of fish (Sand Dabs and Rock Soles).
I took the scales off the sand dab, cut head, pulled the guts out and trimmed the fins about 1/4" in. Just lightly dusted with flour and fried, skin is so thin it almost disappeared. I like them!
For the sole, I trimmed the fins, again about 1/4" in, and then pealed the skin off starting at the tail. Removed head and guts. Will probably sprinkle season bread crumbs on them and bake them tomorrow.

You know, it's surprising we haven't gotten post from polyangler about the exact same thing... Luhr Beach up to Steilacoomb is usually his local go to for same species

Did pretty well on the Nisqually Flats for flounder on Saturday.
