Presently I crab out of an Ocean Kayak Trident Ultra 4.3.  The well behind the seat is about 6” deep with true vertical sides.  I toss my crabs in there and do not worry that they might escape.  Can the same be done in the well of Hobie kayaks?  They seem shallower.

No, the well gets very shallow at the back, 3.5 inches.
There's a u shaped curve at the front as well that is about 3.5 inches.
I would not put loose crabs in the back, they'll be back in the water before you know it.
In a cotton pillow case, yes.

I put my crab in the front bow hold because, well, I have a furry monster that always calls 'dibs' on the back of our Outback.  lol

Actually, I made a quick cardboard fence (covered in duct tape) that goes across the inner hull at the vertical post just in front of the drive well, keeps the crab from scooting by.  I tend my pots on the bow from a kneeling position, then just lift the bow lid and pot up a bit, slide keeper crab into the bow, plenty of space for a dozen up there.
