Polepole this is for you.
As you probably know shark, because of it unique metobolism sharks tend to smell like ammonia, so soaking them in a solution of vinegar or lemon juice helps to eliminate that smell. Milk also works. Some large fish companys have even changed the name of dog fish in the commercial world to help make it more "culinary" friendly so if you see "cape shark" for sale anywhere it will most likey be dog fish.

Shark is a very meat fish with an almost steak like texture. So ther is a multitude of things you can do with it. Here is a quick and easy recipe.

Pesto shark

ingriedients
1 11/2 #shark filet
 2diced tomatos peeled and seeded
1 tbs chopped shallots
1 tbs chopped garlic
dry white wine
S&P
1tbs oil
1/2 cup pesto
saute the shark with tomatos, shallots and garlic (I love garlic, its optional) in the oil when the shark is half way done flip and finish the other side. When done remove from pan and set aside. Add the wine and reduce just a little and then add the pesto and toss shark so it gets a good coating serve over rice or pasta. you can top it with parm or romano cheese.

Shark also makes a great sandwich. Grill a nice piece of shark and put it together with an nice kiaser roll with lettuce, tomato, red onion, and a wasabi mayo. I would suggest a nice pilsner or a pinot grigio. and jicama fries (blanch those first then deep fry, they will get dark because of the sugar but they are good)

Thanks floating.  I had something similar this last weekend.  Soaked the shark in milk overnight.  I've tried lemon, but this shark just sucks it up and ends up sour.  Used tomatoes, shallots, garlic, mushroom, white wine, tarragon, thyme, and italian parsley.  Added some prawns on the side.

I'll have to try this pesto version.

Jicama fries ... oooooh sounds nice.

I have a recipe for shark pot pie as well but never tried it. You should give that a try. If you would like I will see if I can find the recipe and post it.
