Title: ***** 2017 ORC Taco Feed *****
Post by: sumpNZ on May 25, 2017, 11:32:27 PM
Time to get serious!  I'll be running the planning for the Taco Feed again for the 3rd time in the last 4 years 4th time in the last 5 years (can't believe I messed that up initially - time flies).  As always, I might be organizing, but it is YOU that makes the taco feed happen by signing up to bring all the stuff that's needed and helping out with the cooking, cleaning, and so on.

I have been told that the ORC will provide the oil for the frying this year along with plates!

NOTE: Latest intel is we will NOT be getting beer from Ninkasi this year.  They now require a 501c3 and although HOW (the recipient of our fundraising along with Neighbors for Kids) is a 501c3 we can't use their status as they don't allow booze at sponsored events.  Plus it sounds like we'd require a licensed server to dispense all beer even if we had 501c3 that we could get it under.  So, bottom line, this event is officially BYOB.  Unless one of the organizers tells me otherwise.

Sound off if you want to take one or more of the jobs listed below.  Many hands make light work.  If I don't get enough volunteers I'll start grabbing random people and putting them to work.   :police:

As we were unable to fish last year due to ocean conditions several folks brought in frozen bottom fish fillets for the taco feed.  Please sound off if you have enough in your freezer (even if old and freezer burned) that you're prepared to bring if weather looks dodgy as we get close.

Cooking tasks:
Frying fish and tater tots/French fries (sumpNZ, SamM +2 1 more)
Tortilla cooking (INSAYN plus 2 1)
Filleting fish and cutting to taco size pieces (need 6 2)
Runners for food from fryer to serving trays (Little INSAYN plus SamM Jr (tentative))
Set Up (SamM plus 4 3+ people)
Clean Up (as many as we can get)
Prep cook for fish frying
Beer service to cooks and fish cutters
Etc.

Cooking items taken:
sumpNZ - 1x burner, propane and fry pot

Cooking items needed:

300-400 Red Solo cups (BYOB now, so don't need them)

You might want to add several gallons of oil to your list of needed materials as well.  I don't see it listed.

Put me down for:
4 x boxes of Pride of the West.
Tortilla fry guy (on the UFO).
1 LP tank.

Put Little INSAYN down for:
Food runner (if needed).

Updated with Adam and craig's committments.

Adam - were you intending to bring all 6 rolls of paper towels requested?  OK if not, just don't want to assume one thing and get something different.

I am really glad that "Beer service to cooks and fish cutters"is identified.  It is always important to keep the cooks and fish cutters well lubed.
That said, I plan on doing my usual fish cutting job.

Updated with the latest contributions.

If you don't know where to offer to help out, and especially if you are new to NWKA and the ORC, you can ingratiate yourself really well by offering to provide beer service to the cooks and fish cutters.  We had some teenagers that were great for bringing food (and being runners for just about anything else needed), but can't have them running beer.

Also, if you're not much of a drinker, I'd like to have someone willing to take the lead on clean-up.  A sober captain will steer that ship much better than I will by the end of the night.  That is especially true for the fry oil.  I don't want anyone getting burned, and most of us are pretty toasty by the time dinner is over.  I'm good at guilt tripping cajoling encouraging folks to help out, and certainly don't mind doing that, but if you are interested in helping here please sound off.

Andrew, please put me down for the following...

fry pot, burner, propane (will look into getting a fry basket too)
setup/cook duties
chips/salsa
Costco/Kirkland crystal clear cutlery

Once I confirm my son has that weekend free, will put him down for runner duties.

Thanks!

Sad to say but, do to all the new rules, beer donations are getting too complicated for me to pull off on my own. BYOB from now on unless we figure something else out.

Got you on the list.  I'd just get a variety, but typically desirable ones like Coke, Diet Coke, Sprite, etc would be good.

The flour tortillas really shouldn't need flash fried like the corn tortillas do, so they can go on the serving table just before the fish platter.
As for size the 6" taco sized would be perfect.

I will be making clam chowder again with Goldendog. Even with 2 large crockpots last year there still wasn't enough samples to go around for everybody. It seems to be pretty popular.  ::)

Also put me down for:
A Dessert
Small paper cups for chowder
Spoons for chowder

If I can catch a low tide in the next couple weeks to go get some fresh Gapers, I might be able to make a Roaster Oven sized batch. Now who wants to go dig some clams with me?!?! I could use more than 1 limit! I just hate buying them, and fresh ones are so much better.

When will you be digging clams -- I'd go do that with you (never done it before, so I'm a total noob and have no tools, but I have a shellfish license.  Thurs/Fri I will likely be in Newport)

Sorry to threadjack but where is a good spot for clams? I see there are some really low tides the week of the tourney and I will up at camp all week. I would love to take my boys out and gather clams to help out.

I will also bring some Jalepano Cream Taco sauce and something else to help out. Nothing better than a taco shack!

Dude... That's like asking where is a good place to fish! I can tell you there are really good resources and information on the ODFW website, including where and what type of clams can be found where. If you want some place close to Chinook Bend, then you can find them on Siletz Bay: http://www.dfw.state.or.us/MRP/shellfish/maps/Siletz.asp
I have never clammed there myself so I cant give you any more details. But it looks like there is only Purple Varnish Clams and Softshell (mud clams) there. The PVC's are a non-native species and you can keep 72 of them. They are small steamer clam sized. Mud clams are deeper and a bit more work. Your boys will either love it or hate it! If you have never clammed before, choice of footwear is important. Otherwise the mud will rob your shoes off your feet. Waders are a good choice but not rubber boots.

Hope the thread jack was worthwhile...

Alsea Bay supposedly has some gapers and cockles.  I see people out raking for the cockles on morning low tides.  I've only found purple varnish and softshell clams, but I haven't tried very hard to find the good clams.

Sure wish razors were open  :(.

Paul, dutch ovens work amazing for keeping side dishes hot especially if you put the dutch oven into an insulated dutch oven carry bag.
Stuff stays steamy hot for well over an hour before you ever open the bag and take of the lid at the table.

I'm going to aim for 5PM.  But please be patient if it's a little later.  If I don't get off the water until close to the 2PM deadline it might run a little later than that.  In the past I've gotten off the water before 1PM.

Terry and Tony from Lancer Jigs wanted me to relay that they will be bringing Thai noodle salad and costco cake for the taco feed. Gotta love sponsors that donate gear AND bring cake to the party :D

I will be bringing my 2 burner stove and a full tank of propane.  similar to the camp chief ones.

I'm brainstorming what we should bring for the side though.

Updated the list up top.

Food items I do not yet have listed as claimed:
cabbage
additional sides
additional desserts

For cooking items, what I need most out of that list:
wire baskets for fryers
thermometers for oil (I think we have 1 coming, 1 more would be ideal)
tongs
a wire mesh scooper

In case it was missed in between other updates, I definitely have a thermometer and wire basket for my fryer.

Also, my son won't be attending this year - busy working on the weekends.  So we may have to recruit some more runners...

Sam - I think yours was the thermometer I was thinking of.

Too bad your son won't make it.  But I'm pretty sure we'll be able to have enough runners.  I'll grab someone random if I have to.  :)

I've always wanted to try abalone.  That's so cool you'll bring some to share!

I will bring some shredded cheddar/jack blend, so we're probably pretty good on cheese.

We are officially BYOB.  Your generosity is greatly appreciated, but for the sake of our organizers and insurance providers, I won't be noting that as a contribution to the taco feed.  Wish I could though.

I'll be bringing some Ninkasi TD-IPA.  Might bring some homebrew too.  And Scotch.  Unofficially of course.

OK.  I've updated the OP with the latest contributions.  As of now don't expect me to update it any further.  However there are still some items needed.  If you will be atttending the taco feed and you haven't volunteered to bring anything yet, take a look at the first post and pick something to bring.  We still need cabbage, and several cooking related items.

I don't have many people signed up for set up or clean up.  If you do nothing else for the taco feed, helping out there is huge.  I WILL start grabbing random people and setting them tasks if I don't get enough volunteers.  The more people help out the less work it is for everyone.

Oh yeah.  Saturday, please start bringing your food items and cooking items to the area where we'll be cooking/serving (if weather is good that will be by the covered area near the river, if weather sucks it'll be in the barn) around 3-4PM.  If you have a side or something that needs to stay warm you may want to hold off bringing it down until closer to 5PM, but otherwise I'll be starting to set things up around 3PM so we can be cooking a bit before 5PM, so food is ready to start serving 5PM.  Assuming all goes according to plan anyway.

As mentioned earlier, if food is running a bit late, please be patient.  We're all volunteers, nobody is getting paid for this, and we're all going to be a bit tired after fishing.

Good to know - Will unofficially be bringing a bottle of something for the kitchen crew as well.

I like cutting fish and would be glad to help if needed. Is that going to take place at depoe bay ramp or at the campground? I can bring some ice and fish coolers for donated fish.

Probably best  to take a look at the top post and find something there that hasn't already been spoken for - going to be fewer folks monitoring this thread going into tomorrow.

Looking forward to seeing you Barb!  There is/are usually coolers at the weigh-in station for the donated fish - I'm sure another cooler with ice would be welcome.  For fish processing, it seems that is usually mostly handled at camp (especially the drunken kind).  Though if the cleaning station at the ramp is lightly used, might be a good idea to do some processing there beforehand as well.

Mark me down for another year of drunken fish cutting.

That reminds me, if somebody is looking for a last minute item...  First aid kit and bandages for the fish station!  ;D

I brought our HOW first aid kit. Just leave a note if you take more than a couple of bandaids so I can replenish items used before our next event.

Thanks to everybody that brought contributions to the taco feed.  From my perspective it seemed to go as well as ever.  I hope everyone enjoyed the food!

The jalapeno mac-n-cheese was really good, and the Kalua pork was amazing.  Thanks too for the bottle of Bourbon for the cooks.  That one went quickly.  The clam chowder was fantastic, and the abalone was also quite good.  I didn't get to sample much more of the sides or desserts, but it appeared that all was enjoyed.

Thanks too to everyone for pitching in on cleanup.

As of right now I'm figuring on coordinating the taco feed again next year.

Many, many thanks too go out to INSAYN, SamM, Don (not sure of his screen name), sherminator, JamesC, and probably at least a couple people I'm forgetting that were instrumental in cooking all the tacos, and other fried foods.

A big thanks to the Andrew, the fish fry crew, and everyone who brought food.  Not having to organize that part of the ORC is a big relief and I appreciate the hard work that goes in to it.

My son brought me a taco while I was selling raffle tickets so I actually ate a bit of it this year and it was delicious.

Great job on the various food contributions everyone, it really goes to making for a great feed!

Big thanks to Sumpz for the organization, and forward attitude towards success.
All you fish preppers, Sumpz, Sam, James, Sherman, Don...awesome hustle getting food prepped, fried and moved swiftly to the potluck table.  Excellent communication between all of you.

Another big thank you goes out to the crowd that made quick work of getting the food cleared up so we can move on to hear who won, and the raffles.  This goes a long way in making it motivational for the next year in who volunteers or not.
