Not a typical dinner, but I didn't feel like waiting for breakfast tomorrow.  "Everything" Bagel smeared with homemade smoked salmon and caper cream cheese, topped with home cured Lox, garden tomato's and green onion with a grind of black pepper. I'm embarrassed to admit I might have eaten more than two of these tonight ;)

Man that's making me hungry it looks real good.  I'm glad I thawed some salmon for dinner gotta go fire up the barbie.  That still looks better than what I'll be having.

Lots of recipes on the internet for lox.  I hold mine close to the vest, but its basically a sugar, salt, spices, herb mix applied HEAVILY to large pieces (skin on) of filleted salmon (I used an entire 15lber). Wrapped up, skin sides out, in plastic wrap, placed in the fridge and weighted down to press out the moisture.  Flip it every 12 hours and in about 2 days or more depending on thickness its done. Rinse off the cure pat dry and store in the fridge.   I don't cold smoke the final product so purists I believe call it "nova lox" as opposed to true lox.

Add capers and lemon, I'll take 2 orders to go. Went to Reno one time ordered Lox and bagels 2 days straight. Breakfast, lunch, dinner they were so good.
