We smoked up a nice 20" cutty that BenSkoled caught yesterday. It turned out so beautiful that I decided to hang it on my wall.  Nothing like that fresh smoked salmon smell in your house.

Cutthroat trout is so damn good. One of the tastiest salmonids IMO.

So how long did it last on the wall before it was eaten  ;)

So how long did it last on the wall before it was eaten  ;)

It is tasty, but it can be very oily right now.  It seems they are coming off a spawn and binge eating. We've gotten some real fat fish lately.  My household has grown tired of them, so that one was sealed and shipped down to my family in San Diego. A couple of pounds of smoke trout fit nicely in the small Priority Mail envelop for $5.60 and it's there in 2 days.

I think I ate the cheeks out of that head and the rest went into the compost.
