My first time in the salt with my NRS Pike inflatable I managed to stay afloat and even catch one nice Cabazon!

Nice! How did it do through the surf? My perception is that you'd be a little lower in the water than a non-inflatable SOT, which seems like it would be an advantage getting in and out of the surf. I gotta admit I'm a little jealous you don't have to trailer or hoist your boat!

The lack of a keel are going to a big disadvantage when trying to stay straight into the surf.

Yeah good point. I was thinking more from the perspective of center of gravity but the keel is going to be a factor for sure.

The short kayaks that they surf with at Hobuck don't have a keel.  It's gonna move slower and be a little harder to get out, but should be much easier to land with.

A short surf ski either has fins or a very hard chine. Otherwise it would be impossible to carve in a wave.

Nice job!  Good to know that the inflatables are doable in the ocean.  Doesn't your boat come with a skeg? How far out did you have to go to get into fish?
