Mark,  you can also avoid mess by putting a half of a paper towel in your bag.

I used to do that but I figured I'd rather have the juice stay inside the cells.  So, I've been freezing 1st and popping the seal before defrosting.

If possible, I keep mine alive until I fillet them.  Fillets never touch fresh water.

You will get significantly better fillets if you bleed your fish before filleting.
