Big Congrats to TXPaddler and his "squeaker" Dino, the first AOTY Sturgeon since 2009. Great job man!

If I had to grade my fillets I would probably give them an 80. This was my first attempt at filleting a Sturgeon and so I used this youtube video for help.


He took the skin off a lot easier than I did even with a razor sharp new fillet knife. My wife and I guessed we got about 5 pounds of meat off of it (cut most up into steaks and vacuum sealed and froze).

The report is under Willamette Report in the Oregon fishing reports.  I think it is around the third report down.

Nice find there TX. He's got some great tips about filleting dinos and really in general. BTW that belly strip he trimmed off would make some great bait for tipping jigs.

Here's another way that very similar but you don't have to spill the guts. I find that the more guts on the table and knife means more rinsing w/ water and handling of the meat.

Was that your sturgeon? (couldn't see the whole pic on my smartphone. 
The meat looked real red. Wondering if it was bled out or if some sturgeon have meat that is more red/pink than others.

Not my dino but caught in SF Bay Ca. The meat can be from white to pinkish. When it's not bled out well you'll know for sure. :puke:
