I'm looking for a fish finder that is under $750 that has chart mapping of fresh and salt water and flasher mode together. Is there such thing? So far the models I checked has only one of the feature I want or the other and not both.

I only own Lowrance fish finders and know nothing about the features in other brands, but I am neither promoting Lowrance nor disrespecting other brands.  They're simply what I own...

I'm presuming you mean the old-style, round, dial-like display like that on the original Humminbird from the 1970's?

Many Lowrance models will let you choose to show a "flasher" display on the screen.  It's in the menu system and you have to search through the fine-print details posted online to learn that they can show a flasher.  Or visit a retailer and play with them.

It seems that I can't manage to be in a lake and out to sea at the same time, so interchangeable map cards - one marine and one for lakes - would give you what you're asking.  A lot of popular finders come bundled with a card - either lakes or ocean - and you can buy the other.

The fish bite twice a day - just before we get here and right after we leave.

I don't own a Humminbird or Garmin or Dragonfly.  Those brands use map cards, too, and they may also have flasher display capability, so don't limit yourself when searching.

You can find the Lowrance HOOK series Operator's Manual here: http://www.lowrance.com/Root/Operator%20Manual/Lowrance/HOOK-SERIES_OM_EN_988-11004-002_w.pdf

Scroll to page 23 and see if that's what you're searching-for.

There's also this video of and Elite-4 (the HOOK 4 is essentially identical) showing the flasher display:
