I am thinking I might try my hand at shrimping from my kayak. Since the family is getting me a downrigger for Christmas I'll probably rig it so that I can use it to pull the pots. I researched some old posts and found some members used braided line which was retrieved by a downrigger to pull their pots. I just want to make sure I am picturing this setup correctly.

The downrigger line is divided into several sections, the number depending on how many pots are to be fished, and connected together using snap swivels small enough to pass through the downrigger's pulley. To drop a pot the line is paid out to lower the pot until the snap is reached. Then it is disconnected from the downrigger, and connected to the bouy. The process is reversed to retrieve the pot. Is this correct?

How have these setups faired over time? Does the weight over stress the downrigger?

Generally speaking that's correct.  I use half sized pots. The weight isn't an issue for me. But keep in mind spectra floats. So if you have slack you are asking to get your pits run over. I add some weight just a some big split shot to the line as it hits bottom and as I pay out slack. Maybe 15 to 20ft below the buoy   Not as big of a deal if you are "tending" the pots.

Worked great for me though the lighter pots can drift off. It's a matter of balancing any weight you need to keep it on the bottom.   I haven't had issues but if it's reef-y down below, spectra will fray so maybe you need a thicker cord for the last few feet you can pull by hand. 

Works for me so far but definitely still in development stage.  I used 100lbs spectra.
