Just it doesn't get lost in the clutter of the main taco feed thread, I wanted to post this up to see who is coming to the ORC taco feed that have dietary restrictions.

For example, my wife and kids are all gluten intolerant. 

I will be trying to make sure the gluten free fish breading and corn taco shells get cooked first so as to avoid gluten contamination later on.  Be good to know how many others are needing gluten free so I can plan that out.

Any other dietary issues please post them up here.  That way I can try to accomodate them with as much success and as little confusion/disruption to the rest of the feed as possible.

I'm curious about your gluten free breading. Are you using panko or something else of the sort or are you simply just seasoning the fish and grilling it? I like deep fried fish for my tacos but when I make fish tacos at home I use a marinade and just fry the fillets in olive oil.

Several ways one can do that.  At home for deep fried fish I usually make a breading using a gluten free pancake mix as the base (I add some sugar, spices, herbs, eggs, oil, and water/beer to get the right consistency).

I know Dino brought a dry coating for the fish tacos last year that turned out to be a great gluten free coating.  Don't remember exactly what that was.

fwiw - my buddy only fries his fishes using rice flour and then puts johnny's on it after it is cooked.  nice crisp on the outside.  not a batter, but it is really good.

Oh glad I saw this. I don't normally impose but since you asked-

I have dietary restrictions. No gluten and no onions or cabbage are the big ones for a taco stand.

I'll be bringing oyster sausage for my contribution to the get fat and happy cause :)
