I'm looking to try a few different models of kayak, and I'd love the opportunity to test drive a few, since this will be my first kayak. I'm in Fall City, so Seattle seems like the logical place to look. I should say that the Hobies, while very cool looking, seem to be out of my price range. I'm looking for stuff in the $1k range to start out. Any recommendations?

you can do test paddles at Northwest Paddling Festival, May 10, at Lake Sammamish.  There's a $7 fee for demoing boats.  probably one of your best bests these days for multiple makes/models all at one place.  It could be a good starting place for you.

let them take risk, for God sake, let them get lost, sun burnt, stranded, drowned,
eaten by bears, buried alive under avalanches -
that is the right and privilege of any free American."

Any place that rents kayaks. On the south end of Lake Sammamish there are rentals - it's some sort of side business of Kayak Academy named Issaquah Paddle Sports. On the south end of Lake Washington right next to Boeing is another spot named Cascade Canoe and Kayak. They bought out Aqua Sports in Redmond last year too.

Hobies are well over your price point, but demoing them is inexpensive.

Not sure how many Hobies are available for rental as they are pretty expensive for a rental fleet.  If you are interested in demoing Hobies you might call them and ensure they will be at the NW Paddling Festival (kind of a biased name :) ).

Years ago when they were at Sand Point they let me demo some boats.

My first boat was an Ocean Kayak Trident 13 Angler. It's a great paddle boat.  Not sure what the new ones are going for.
