Was talking about this just last week -- don't know why this works, but what I do is soak fillets in an icy bath 30 minutes before sealing and freezing. Any worms abandon ship and then I just discard the bath water. I know freezing alone will suffice, but I don't want to serve fish that doesn't look pristine.
