The nice thing about the atv whip flags are they don't break when your boat is upside down and being thrown back on the beach by any angry Ocean :)

How do you attach an ATV whip pole to a kayak?  Seems like they have small diameter threaded ends.
I wrapped the base of mine with a couple of layers of foam insulation tape and electrical tape to make it thicker. Then I zip tied it to a Scotty fly rod holder and mounted that on the back of my kayak. Five or so years ago I did this as a quick and dirty setup as I was heading out to Pacific City the next morning. I still use this exact setup today since it worked so well.

  Another piece of gear that has only been briefly mentioned is some place to stash all this gear  on board.

  A Milkcrate.
  There are commercial products made that are really nice. But here is where guys get very creative. ::)
  As an example : get 3 or 4 pieces of 2
" ABS with enough diameter to hold your rods, a net,
   and you can also plant your safety flag pole in one. Cut to correct height and zip tie to crate in whatever configuration that works best for you. Then secure to back of kayak and go fishing.
 Milk crates hold your tackle boxes, lunch and beverages, and anything else you don't want to stow in a hatch.

Pretty simple, the 30lb version fits the tankwell darn near perfect...I bolted a 3-rod rack onto the front using stainless hardwear and large flat fender washers with liberal "goop" applied to keep it all watertight. I also added some stainless "u-bolts" (some more fender washers and goop) in the "handle slots" for me to run my tankwell bungee through to make it huli-proof...works magic!

Also makes a damn fine crab live well

No Problem! However, I have to give the late Ron Sauber some credit there. He was pimping them before I made mine.
My wife thinks fishing is merely guys wandering around like idiots swinging sticks in the air. Many of my trips prove how smart she really is.

Certainly not the only reason :)

For mine I drilled a hole in a male Scotty adapter thing  I had laying around., threaded in the pole and gooped it into place. So it now connects with a Scotty pole holder, works great!
