I've only fished for them for sport, I've never tried to eat them. It would take some convincing for me to try it, but I might. Part of the problem is where I fish for them... I don't eat any resident fish from the Willamette or Columbia. If anyone can crack the code it's pmmpete! Seriously looking forward to hear what you find out.

If I ever get a kankerin to give it a shot I will report how bad or good it was..lol. Maybe I could just talk someone into taking one for the team!

I've only eaten carp once, and it was in Afghanistan.  My Afghan colleagues brought in a big "Afghani fish" dinner for my advisory team.  It was carp.  Gutted, cut into skin-on, bone-in carp steaks and fried. . . really, really well done.  Once you got past the scales, fins and bones and found a chunk of meat it wasn't awful, considering the culinary treatment it had received.  They served it with a pretty good sauce, almost like a runny tartar sauce.  I won't say it was the worst thing I ever ate, but I didn't go back for seconds.  I did not tell them that in the United States many people that catch these throw them on the bank to die and rot.

When I lived close to good carp fishing I used to love it.  About 10 years ago carp fishing almost got me on Outdoor Oklahoma (OK Fish and Game's local TV show), but I couldn't work out a date with the production crew.
