OK Allen this is for you, I will make it quick. For an app I did smoked trout puffs with a mushroom purree. Then a beef wellington, which was done from scratch, that means I took two days to roll puff pastry. A beef wellington is a full tenderloin seared and wrapped in puff pastry with duxcelle and foi gra,(mushroom purree and fattend goose liver) And then baked until fluffy and golden brown. Rather opulent. And then mashed sweet potatoes and green salad and wine for me and the wife and juice for the chillins.
I couldn't eat for two days after that, it was so rich, but damntastey.
