Ka-Bar.  It's made by the original company, but with updated materials.  I've had that knife since... 1999 I think, it's been everywhere from Isle of Palms South Carolina, to Camp Sherman on Rainier, to Afghanistan.  Holds an edge great and it's durable as hell.  Tough enough to hack away at... well whatever needs hacking, and precise enough to filet a Salmon.

Does it rust in the salt? 

Well, my Kabar is black epoxy coated carbon steel with a leather washer handle and would probably last 20 seconds before beginning to rust if I took it out on the ocean - the new ones are stainless (440A) with Kraton grips.  Fun knives.

I'm probably threadjacking - cabezon spines to fillet techniques to knives... 

It had a little rust where the blade and guard met once, but it washed off in the sink.  It's 440A and you can view all the specs here Kabar.com  Says right under the knife "Stainless steel blade resists corrosion and with proper care is appropriate for use in water or wet conditions."  I'm guessing the "Proper Care" portion is why mine has served me so well.  The metal is also epoxy powder coated, not sure why they don't mention that as all the retailers do.  

Another neat feature, which is why I like it for the kayak so much, is the sheath.  It's a very hard plastic, with a velcro + snap portion for going around your belt, with that design you can open it up and attach the sheath anywhere you want.  I attach mine to the seat strap and the knife stays right behind my seat.  The knife is held into the sheath through a "click" in friction method, as well as a rubber ring that can be stretched over the end of the handle.  There is also a hole in the bottom of the knife where you can run a piece of 550 to tie it off for additional security if you feel you might drop it.

It appears that the company has updated the synthetic sheath and changed the features a little, but to the same purpose.  Looks like the common retail price is $75.
