I got my kayak in May and have been out perhaps 20 times and I love that fact that I have a fantastic time whether or not I actually catch any fish.  It is like going for a hike in the wilderness but on water and with fishing added in as a bonus...I also love that the Hobie Mirage drive is very low impact exercise, 5 hours out pedaling and my knees/ankles/back feel just fine, ready to go out again the next day...

but what I really love is that last night, my wife asked me if Hobie made a tandem that we could pedal together for non-fishing outings and she wanted to know if it could also be pedaled by one person, perhaps with a dog in the forward space (so she could go along when I take the PA12 fishing)...so I showed her the Outfitter and Oasis boats and she said "yeah like that, let's think about getting one of those next spring, in that blue color..."

and then I started thinking, if you also wanted to use an Outfitter or Oasis as a 1 person ocean fishing kayak, which would be better?   what would be the advantages/disadvantages of each boat?

life is good.

I think you'd enjoy just getting another single for her and paddling separately.  One of the beauties of kayaking is captaining your OWN ship.  And, it gives you another arrow in you kayak quiver.   ;)

good point, I negleted to mention that we also want the tandem so that our son/fiance and sister/bro-in-law can take it out on coastal lakes near us when they visit...so a tandem that can also be captained by one person is a must in this case...

This doesn't quite address your question but, the times I go with my wife in her tandem Sea Eagle inflatable, it's not much fun. However, she really like paddling my T-13 even though she doesn't fish and the fun level is way up there when we each have our own kayak. My 2 cents.

the extra seat in the tandem would be great for a dog though.

mine rides behind me in my outback but I lose the storage space for gear.

I have an Oasis and we love it.  We both have Revos as well, but my wife hurt her hip a few months back and can't do more than an hour or so solo now.  In the Revo I can move us both at 4+ mph all day.  It also handles just fine with me in it solo - front or back seat.  Really stable too.
