This is my new favorite filet knife.  My wife found it online.  It's super sharp and has the right amount of flex for me.

I use my Kershaw more on the water now as it has a lot of backbone than my Marttini which I've had for over 40 years. I still use it for carving meat around the ribs as it's a little bendier... Good blade.

Yes, I bought one of those and have only used it a few times but I like it a lot.

My family has been using those knives as long as I can remember.  I think I have three of them around the house.  They are a tried-and-true in my book.

I also have a Kershaw, but it seems this edge is somehow sharper.  I'll need to be extra careful when it's time to sharpen.  I'm even afraid to put the steel to it, for fear of screwing it up.

Looks good. I am looking for a new knife for filleting rockfish. What is the blade length and how stiff/ flexible is the blade.
I have been trying a new fillet method for speed cutting rockfish and I am leaning more towards a thin, stiff, straight blade than the curved type I prefer for salmon and larger fish.
If it isn't dull there is no need to hone it. Many guys do more damage with a steel than they think.

Cutco

Possibly one of the fines filet knives with the adjustable blade length and their "forever" guarantee.
A bit more cheddar, but you know its worth it when you hold a good knife in your hand.

I also have a Normark Rapalla (in black). It is also a great knife for the price point and holds an edge remarkably well.

Here are the three knives I use.  The Marttiini (wood handle) is stiffer than the Kershaw (orange dot on handle).  The shortest knife (update) is very stiff.

I just found that Marttiini knife online, but maybe it's a shorter length. Mine looks like 7.5".

I have one of those. They are great. I have had it so long, the handle started to constantly come of the blade due to a little rotting o the wood. I filled it with epoxy and it is good as new.  The blade still does look new.

That's a classic for sure.  As far back as I can remember growing up my dad had a knife and sheath exactly like that stored in his tackle box.   good knife
