There are SOOOOO many places where I'd like to put something on my Outback, but just can't reach from the inside to put a backing plate. For things like leashes for paddles or bonkers or to attach a fish stringer, I'm happy to use a wood screw as they won't need to hold against very much. But for things that really need not to fail (like an extra carry handle, a rod holder base, and so on).

Which is stronger - rivets or well nuts ?

If you search the forums this topic has come up a few times over the years. The rigging bullet is definitely an option. I've gone with tri-fold aluminum rivets the few places I've needed something like this. They've held fine but I really haven't used them much. They're spendy $$ on Amazon and kayak shop sites, but if you google around a bit you can buy them in bulk (a lot of 100) much cheaper.

Pinstriper-

I am in a similar situation right now in exactly what you are asking. The fact that you are considering it is the important thing. Anything with a backing is going to be stronger than rivets or self tapping screws in my mind. If you cant get access by reaching then the well nuts or rigging bullet is probably the best option. The question is, how strong does it need to be?

In my case I want to install the Hobie sidekick AMA's on my Revo. They go in a near impossible place to reach behind the seat just like the Outback. The Hobie sidekick install kit includes the use of well nuts. I would consider this pretty severe duty for well nuts!!! Anyway, I would prefer mounting it on geartracks to make it quickly removable. GT175's wont fit, nor will the fullbacks inside. soooo.. GT90's with backing plates (using the 8/32 rigging bullets). On an 8" GT90 that's five 8/32 screws into aluminum backing plate per side. Is that going to be stronger than two 3/8 diameter well nuts per side? hmmmm...
