Actually, your question got me thinking about this.  I was under the mistaken impression that skates had the same barbed stingers as rays.  Gotta love the internet for clearing these sorts of things up!  Aside from that, they do have a mouth full of nasty teeth but I guess that can be delt with.

 HHMMMM. Well thanks for the clarification. I hear skate wings are used as an alternative to scallops. If I knew where and how to catch them I wouldn't mind trying it. Bacon wrapped scallops are GOOOOOOOD!

You could even cut them out in animal and fish shapes with metal cookie cutters.  ;D
