friend of mine, who doesn't "do fish" went fishing... he doesn't eat fish, he doesn't like fishing, but found himself on a charter with a rod in his hand - and a 15# Ling on the end of it!
Lucky me, i got one of the fillets...

Here's something I "whipped up" which should work for Lings, Hallibut, and I might even give it a try with Sturgeon.



Here's what you need:
fish
salt
white pepper (preferred, but regular will be OK
rice or parchment paper

juice from two lemons
leek or fennel bulb (julienned)
celery (julienned)
zucchini (julienned)
yellow squash (julienned)
mild onion (chopped)
garlic (minced)
ginger (grated)
parsely (chopped)

dry white wine (Pinot Grigio is preferred, Sav Blanc would be a good second)


Saute onion, garlic and ginger until fragrant, add 1/2 of wine and rest of veggies and cook for 2 minutes.  remove from heat, juice half lemon into veggies

rice paper: moisten rice paper in hot tap water for about 30s, remove and pat dry.
parchment paper: fold in half and re-open (just need the crease).  oil lightly or spray with non-stick.

Salt and pepper both sides of fish.  place fish onto paper, Spoon equal amounts of veggies onto each fillet.  drizzle each packet with remaining lemon juice and wine, no more than 1ts each. add one pad (ts) butter and 1ts olive or truffle oil.  Grate some lemon zest on top, and toss a bit of chopped parsley.  Fold up papers to seal things up.  Start at a corner and make a fold every 1/4"


if using rice paper, sear for two minutes, each side, in oiled skillet, use same skillet and bake in center of 400f oven for 8-12 minutes, depending on thickness of fillet.

if using parchment, just throw in the oven, 400F for 8-12 minutes

you can also substitute dough or puff pastry for the paper for something a little different.


I serve this on a bed of paella flavored with lobster stock, or you could use pilaf.


tonight i'll prepare something a lil different - pancetta wrapped ling!
