Holy crap we're talking beef brisket right?

You don't wet marinade a brisket. That is blasphemous. What are you from Tennessee or something? ;D I thought they just ate swine?

Onion Powder+Sea Salt+Black Pepper+Garlic Powder+Cumin+Paprika.

Rub on let sit overnight. Smoke with HICKORY or MESQUITE at 150 degrees for 12-18 hours. serve with sliced onion, pickles, jalapeno + beans & potato salad & white bread.

Enjoy the best brisket you ever had. The way brisket should be.....Texas style.

Good question squidgirl...

Here is my recipe"

3 Cups Demerara Sugar (Turbinado in the US)
1 Cup Pickling Salt
2 Tablesspoons fresh fine ground Black Pepper
3 Tablespoons Garlic Powder
3 Tablespoons Onion Powder
2 Tablespoons Chili Powder
1 Tablespoon Dry Mustard
2 Teaspoons Cayenne Pepper
2 Teaspoons Ground Cumin

I rubbed, places in a large plastic bag, removed the air, and let sit in the refigerator for 24 hours....  (Thinking of vaccuum packing it next time, if I can get 2 gallon vaccuum bags that is...)

I then removed from the plastic bag and placed directly on the grill, fat side up and smoked for 1 hour at 200' F...  Spritzing the Black Cherry Juice and Dark Rum Mixture on every 15 minutes.  I then flipped in, and smoked fat side down for another hour, spritzing every 15 minutes with the rum/juice mixture.

After the second hour, I placed the whole brisket in Aluminum Foil, and returned to the grill, fat side down for the next hour, spritzing every 30 minutes....  Then flipped and smoked fat side up the last hour, spritzing every 30 minutes.

I then removed it from the smoker, and let it sit for 1/3 hour before opening the aluminum foil and slicing for serving.

DELICIOUS.

That sounds right. I thought you were using a wet marinade for a sec. Sorry, I get a little defensive about beef BBQ!

wet marinaded (brined, although a little longer than overnight ;D), smoked brisket is called Pastrami in most other parts of the country  ;D

I used a Dry Rub, but you will scream at what wood I used for the smoke....  Apple and Cherry Mix....

I have had Texas and Okiehomer Brisket, having the misfortune of having to spend almost 3 years of my life in those god forsaken states.. (Californians (I am a native) and Floridians agree about only one thing.....  Texas SUCKS.)  They are good, but I will put mine against theirs any day of the week..

True. But the BBQ is bomber.
I had the misfortune of spending 25 years of my life there. Texas hill country aint that bad, but it's still Texas.
FYI- Florida totally sucks too, except for some of the beaches. Pretty much the entire south is not for me.
Hence my relocation to PDX via Arcata, CA.

I apologize if I offend anyone.

If Austin Texas was Texas, it would be a reasonable place to live. But to have just that one nice town in the middle of a huge state that is otherwise not forgiving, then I agree.....Texas is not for me!

Well, in defense of Texas...  Austin, San Antonio, South Padre Island and the Rio Grande Valley around Big Bend National Park are the saving graces of the state.

As for the rest, no thanks.
