I thought I'd post up some of my favorites now that the boys have some in their freezer.

-Allen

Smoked Albacore Bellies Brine
- 1 part soy
- 1 part mirin
- grated ginger
- optionally add pepper and/or garlic
- brine overnight to a day, smoke with cherry wood at an above average smoking temp to melt the extra oil out.


Tombo Kama (Albacore Collars)
- 1 part sake
- 1 part miso
- 1/2 part honey
- ginger
- marinate overnight and then grill, not overly hot as the marinade browns/blackens.

Favorite Marinade
- Italian Dressing

Albacore bites with bacon and Heinz 57
- wrap a chunk of albacore with bacon and skewer on a toothpick
- apply Heinz 57 generously.
- grill or pan cook.
- this is unbelievably good stuff!!

Wow.  The belly was incredible.  And the cheeks were even better.  Thanks for turning me on to those guys.  I'll never leave them in the chum bucket again.

Cut a loin diagonally into medallions and coat liberally in a wasabi aioli sauce (really easy to make)

Grill 5min per side and serve on focaccia bread with tomato slices, onion slices and a liberal slathering of remaining aioli.

Andy, the Chum Bucket always smells like Tuna.....   ;D

Simple Smoked Tuna Bellies

- Cut bellies in half down the length.
- Remove dark red meat down the middle.
- Coat strips liberally in canning or rock salt for 30min
- Rinse strips, pat dry and sprinkle with pepper or apply a dry rub of spices
- Hot smoke over alder, cherry or mesquite for 3hrs.
