Pretty simple recipe.
-fresh rockfish fillets deboned and skinned.
- dip fillets in flour, then in lightly whipped egg (2 eggs), then dip in Panko breading
-place fillets on baking sheet and in a preheated oven set for 400 degrees.
-cook for about 15 minutes (or until fish flakes with a fork).
-enjoy.

I paired the fish with paprika sweet potato fries, olive oil coated grilled asparagus and vanilla yogurt infused with minced garlic and a bit of mayo.

Looks pretty good, no very good. Baking (broiling?) battered fish like in your recipe makes it so crispy and not nearly as oily as deep-frying.  I may have to defrost some of em fillets and take your lead!

excellent way to cook fish! Very healthy.
 I do the same....but I sprinkle some spices on the fish and let it set for about 1/2 hour before applying the crust. :banjo:

I do the same without the flour.  I also season up the panko with some goodness.  Never tried baking though; I have always just fried in about a tbsp of olive oil.  Will have to try that way now that I have an oven that works well.
