My go to are 1oz freshwater jigheads, and the 3" berkley gulp swimming mullets. I like the freshwater heads since the hooks are far smaller since flounder don't have much of an intake. I don't think the color matters much, but I typically use white heads with either white or green bodies. The biggest thing is staying in contact with the bottom. If your jig is swimming it's not fishing for flounder. Try to bounce it off the bottom as vertical as you can. When you feel them tapping on it, give them a chance to suck it in before you set the hook.
