Serves 2

1 Clove garlic, minced
Oil
4 -8 cleaned prawns or large shrimp
1/4 teaspoon thyme
6 fresh eggs, beaten
2 1/4 oz. Brie cheese, cubed

In non stick coated skillet, saute' garlic in oil til golden. Add prawns or shrimp, stir to coat, saute' a few more minutes until meat is no longer translucent

Sprinkle with thyme and pour in beaten eggs.

Lift edges of eggs as they cook, tilting pan until egg is no longer fluid.

Scatter Brie evenly over surface, lower heat, cover skillet for about 2 minutes.

Fold omelet in half, cover skillet again, remove from heat,let stand up to 3 minutes as cheese continues to melt.
