Hobie Revo users might appreciate this one.  I needed some storage on board my Revo 16 with the Vantage CT seat, and I like to keep my tank well open, so a crate is not the answer for me.  Lots of googling lead me to TackleWebs.  They make mesh pockets for boat storage, and their 16"w x 12"h fits the back of the Vantage CT seat pretty well.  I haven't tried to max mine out yet, but so far it has held a 9"x13" Plano box, a smaller dry box I use for signal flares, 3 or 4 extra 11" flashers, and a 6" hoagie sandwich with a little room to spare.  When I go home this weekend I'll update this thread with an installed-and-stuffed pic.

I have no affiliation with the company beyond being a satisfied customer.

looks cool, but isn't the back of the seat about the least accessible topside location on the kayak? or maybe i'm less flexible than most...

A long time ago I attached a set of nylon pockets from a tool holder designed to strap onto a five gallon bucket to the back of the seat of my 13' Trident, and I stored my fishing tools in the pockets.  The tools were attached to the set of pockets with leashes or retractors.  I found that it was kind of awkward to get at the tools, particularly when wrestling with a fish, and I found that it was more awkward to put tools back into the pockets.  I now do most of my fishing from a 13' Revolution, and I keep my fishing tools in the mesh pockets located next to my knees.  This is way more convenient than keeping them on the back of my seat, and I didn't add a back-of-the-seat gear holder to the seat of my Revolution.

I think that back-of-the-seat storage for things which you only need to use occasionally, and can turn sideways in your seat to get at the storage, is probably OK.  However, storing gear on the back of your kayak seat raises the center of gravity of your kayak. I'd rather store that kind of gear in the hatch or rod pod between my legs, sitting on the bottom of my kayak.

Seat back storage is easier to access on the water than the front hatch of a Revo 16. And no, I don't store regular-use items there. Like I said.... Tackle, emergency flares, sandwiches. It's easy enough to get into if I sit side-saddle. I can get the Plano box in and out from my normal position, but I am pretty flexible.
