When participants in the Mack Days lake trout fishing derby on Flathead Lake in Montana turn in fish, the Confederated Salish and Kootenai Tribes, which run the derby, uses this machine to fillet the fish.  It only takes a couple of seconds per fish. The fish are vacuum packed, frozen, and turned over to food banks.

I want one of these machines for Christmas!  Or better yet, a consumer-sized version of the machine.  The full-sized version would take up a lot of space in my kitchen, and would be messy to operate.

What no video of the process? Also be interested to know where the innards go or do the fish need to be beheaded and gutted?

What no video of the process? Also be interested to know where the innards go or do the fish need to be beheaded and gutted?
The fish have to be manually beheaded before they are fed into the filleting machine.  The machine dumps the guts, backbones, and ribs in baskets underneath the machine.
