Think I'll try this, maybe leave out the flour (http://www.foodnetwork.com/recipes/bobby-flay/fried-eel-recipe/index.html).
Ingredients:
    * 1 (1-pound) eel
    * 1 cup all-purpose flour, plus more for dredging
    * 1 teaspoon seafood seasoning (recommended: Old Bay)
    * 1 teaspoon Cajun seasoning
    * 3 teaspoons salt
    * 1 cup blended oil
    * 1 teaspoon chopped garlic
    * 1 teaspoon chopped onion
    * 1 teaspoon freshly ground black pepper
    * 1/2 cup white wine (recommended: Chablis)
    * 2 teaspoons butter

Directions:
Clean and skin the eel, and then cut it into chunks. In a large bowl, mix together 1 cup flour, seasonings, oil, garlic, onion, and pepper. Add the eel to this mixture and then marinate in the refrigerator for 1 hour.

Dredge the marinated eel in flour. In a saute pan over medium heat, sear the eel until golden brown, about 7 minutes. Add the white wine and cook until reduced by half. Add the butter and cook until it melts and browns slightly. Divide the eel among 4 serving plates and top with the butter sauce.

PNW...  Hats off to you for eating what you caught!!  I have tried just about everything I have caught/gathered from sea cucumbers to moon snails but.. Wow that eel would take some doing, looks a little slimy?.. Hard to clean?   Let us know how it tastes.. I might have to go pole poking again if its good.  I agree with the weirder it looks the better it tastes theory.

Yeah man. Have heard a lot about them and how tasty they are. If Unagi and Anago are even slightly similar, which I'd guess are, it's gonna be real tasty! Let us know.

Prickleback good!!  Mmmm.  Although looking at their faces creeps me out.  It's a sweet meat, similar to greenling, but not as flaky (not that greenling is flaky, at least not in comparison to rockfish).  Yeah, it has that typical unagi/anago eel texture.  Hmmm, I'm going to have to look for some tides down here to get out pokepoling.

Just finished dinner. It was very good. Polepole was right; delicate flesh, along the line of unagi/anago. recommend kill & clean asap, maybe discard belly meat. slimiest fish i ever cleaned. skinned w/ cuts behind the head, then pliers to pull the skin off.

Was taught a trick a couple years ago for dealing with the slime on octopus, and I guess it would work on eel. Put it in a bucket or pan and pour a bunch of salt on it. Scrub it with the salt and it cuts through the slime. Worked well with the large octopus my friend caught.
