Karl(nogginYakker) turned me on to Zatarains seasoned fish-fri crispy southern style. MM, very good. I added my own touch and soaked the fish in a teryaki soy mixture for ten minutes. Tried some with just the zat. coat, some with a thin mixture of batter and then zat. coat and some with just batter. It was all good, try it some time..

Zatarains rice mixes are pretty good, too. A little on the salty side...

Hey Roy,
This morning, while diggin around in our chest freezer looking for a package of steaks, I found something better. A vacuum sealed package of bluegill/crappie fillets. We thought we ate the last pkg about 6 weeks ago.

Dusted with Zats, 30 seconds in hot oil, and eaten for dinner! Mmmmm!

mm, making me hungry. I had to go take a pack o' rockfish out of the freezer to cook up tomorrow. Gonna try a different flavor of the Zat's i think. It's real good with the batter first then the flopped in the Zat's. Finally ran out of 2008 fish and working on '09 packs, need to get out and get some more.

I could google it, but I'm too lazy... So, what the heck is compound butter? Sounds like something that can be purchased only from a religious extremist group at their multi-family "ranch".  ;)

Compound butter is butter that has a flavor, or additional ingredient(s) added to it.
