hmm, interesting. Finding orange wood around here would be a challenge.

I smoked the Trout a few days ago, got lazy and just dry brined it all with the brown sugar, salt and spices. Used  a mix of Alder,Apple and Maple wood. Boy did it turn out good, i'm munching some right now!!

Dry Brining is the secret...  Slow smoking is the second step to the process...

 any fruit or nut tree wood is ideal for smoking. I look for neighbors trimming apple, cherry, and pear trees ( what we have most of here on the South Coast) and ask for the larger pieces to take home.. Just be careful of what they may have sprayed on them during the season.
 I have even had lilac smoked steaks that were very tasty. ;)

I've been working on plans for a new smoker and I appreciate your photos.  Gives me some ideas.  I picked up tripple teflon coated racks last year at the Tanger Outlet Mall but, with no real salmon returns, held off on building it.

Not sure how well a freezer/refridge shell would work for me here as everything rusts quickly to the point I have to replace all the exterior house lights (not bulbs) every 3-4 years due to rust and corrosion from beach grease.

But that is one sweet smoke you've got.  I'm going to save those pics and my friend suggests making one out of T-111 siding.

It's a very large pool at the very lowest end of the Clackamas River.  It's pretty close to the Sheriff Department's boat house.

Its often called the Clackamas Lagoon.  It was created by dredging years ago, used to run barges out of there if you can believe it or not..  What prompted you guys to give that area a shot?  Lots of much better fishing areas not far away (for steelhead and salmon).  What did Zee's fish hit?

Thanks to all the snow melt, the current was ripping on the river so we tucked into that lagoon to check for some bass.    Zee was working a small jig near the mouth and lucked into the steelhead.

That thing looks dead, and for a while.  Looks like a zombie fish!
