finding new ways to cook the loads of cod/rockfish i have in the freezer.


ingredients:
enough filets of fish for amount of people serving
butter
Teriyaki sauce
can or fresh sliced pineapple
onion
spices of choice

place fish on a piece of aluminum. drizzle just a bit of teriyaki on it slap a couple pats of butter on top. put a few pineapple slices and sliced onion on the fish . sprinkle with spices of choice. I just use a little italian seasoning. place another piece of foil over that and fold edges of the two pieces of foil to make a tight sealed pocket.

Cook in a 375 oven for 15-20 minutes or until done how you like it. Be careful not burn yourself with the heat coming out of the pouch when you open it.

It makes alot of juice, so it's excellent on top of some rice.
