Did this last night with cabby filets from ORC 2010 and the wife loved them -

2 tbs olive oil
1 onion
2 tomatoes (crushed or diced)
2 tsp dill
2 tsp orange peel zest
1 tsp sea salt

1. Heat up a couple tablespoons of olive oil in your saute pan (don't go any higher than medium heat with olive oil).  Slice onion while its heating up.
2.  Throw onions in and let them cook for 3 minutes while you prep tomatoes.
3.  Throw tomatoes, spices and a half cup of water in. Stir. Cover and let it cook for 2 minutes.
4.  Add filets to top.  Spoon some of the sauce on top of your filets.  Cover and leave it for 5-7 minutes. My wife likes her fish slightly overcooked so I went 7 minutes medium heat, then turned it down to lowest setting and left it for 15 minutes.  It was slightly dry but picked up lots of flavor from the spices.
