A neighbor gave me this one, I haven't tried it yet.

Baked Cod Portuguese

2 tbspns olive oil
1 onion, peeled and chopped
1 clove garlic, peeled and chopped
1 green pepper, cored and chopped
1 14oz can tomatoes - chopped
2 tspns paprika
4 cod fillets
parsley for garnish

Preheat oven to 375F and grease an ovenproof dish

Fry the onion, garlic and pepper in a pan to soften. Add the tomatoes and paprika and simmer for 5 minutes until the sauce is thickened. Salt and pepper to taste. Put your fish in the dish, pour the tomato sauce over and bake for 20 minutes. Sprinkle your parsley and serve. Yum
