Can anyone make a reccomendation for a good "cooking fish of the northwest cooking book"? In an ideal world it would have suggestions on everything from trout to salmon to bottom fish maybe even panfish.

I'm not a cook book person but I've heard Tom Douglas's cook book is pretty good .... the one with him holding a big yellow eye on the cover

I've got a few cookbooks, with a dozen or so more I'll hit the 200 mark ::)

If you want to learn how to cook fish/shellfish and then apply what you picked up to Northwest species I highly recommend "Fish & Shellfish" by James Peterson. It has great recipes and  a bunch of technique  stuff. aka. fish stock, breaking down lots of various fish etc etc. Its more than a bunch of recipes, its a guide on how to cook seafood.  If I could only pick one this would be it.

Scott Haugen has a few books out dealing with NW fish.  I have his "Plank Cooking" book and his "Salmon and Steelhead" book.  Good, but its a lot of your basic wrap in foil and grill/bake stuff.

Another book I use a lot is a cheezy little book called "Seafood twice a week" by Hansen and Snyder. Lots of easy yet tasty ways to toss fish with other goodies and bake.  Things like Cajun baked flounder  (I use rockfish) or "Mexican Cod" basically baked ling cod with Tex mex ingredients.  I modify the recipes and make them my own but it has lots of great easy ideas.

I got "the saltwater cookbook fish and seafood: From ocean to table"

By Tim Lauer.

It is pretty good. has a good overview of prepping and cooking all kinds of seafood.

I get my books from Edward R. hamilton mostly, can find great deals on expensive books sometimes.

"the wild fish cookbook" looks pretty good. recipes from guides and lodges.

Thanks everyone for your suggestions. Sounds like "fish and shellfish" is one of the ones to own. Some other good suggestions I might look into. It sounds like Pelagic should start a NWKA cookbook  rental program with his hundred some odd books. Has anyone ever thought about doing a cookbook based on recipes from our site?
