I decided to cook some of the lings I caught at Depoe Bay last weekend.

-Soak cedar plank in salted water for at least 2 hours
-sprinkle sea salt, coarse ground pepper, Johnny's seasoning and a bit of freshly minced garlic on the ling fillets. 
-preheat grill on medium
-when grill is almost done preheating, spread some olive oil over the soaked cedar plank and set it on the grill for a few minutes.
-set fish on cedar plank once it starts to smoke.
-set 2 slices (quarter inch thick) of butter on each fillet and set slice of lemon on top of each piece of butter.
-fish should cook for about 15 minutes on medium heat on the grill. Make sure to keep an eye on your plank as it may catch fire. Keep a spray bottle handy.
-you'll know fish is done by feeling for firmness or when it can it flakes when you cut into it.

I paired the fish with some paprika/garlic sweet potato fries and a homemade garlic, butter, oregano, and basil fry sauce.

My wife is not a big fish eater but she cleaned her plate and asked me to make this again next weekend.
I made sure to let her know that our supply won't last forever and another trip to the coast is a must in the near future. ;)

That looks so good!  I'm with J-fek on that one.   I have never used the cedar plank method.  I haven't even heard of it before.  How thick of a cedar plank do you use?  Great write up Paul!

Many of our outdoor retailers carry the planks in their outdoor cooking sections, along with usually several books on the subject. check it out next time you go in. helps justify the costs of your new gear if ya bring her stuff like that home too.

Yum! You're makin me drool. That's similar to how I do em, I top them with butter & carmelized onions instead of the butter/lemon. Fantastico!

DTS you can buy planks at Freddys. They come 2 in a package for like 5 bucks. The planks are long enough for a good sized salmon filet so i usually cut them in half and have enough for 4 uses. Not sure of the thickness exactly but they aren't very thick.  I'd say half inch or less.

If you are inclined and have the tools you can also make your own.  I have a decent stash of cedar, alder, several different fruit woods and my favorite vine maple.
