No problem ... I enjoy cutting fish in small quantities and showing others how to get the most meat from their catches.
Here are a few work pics. This is what I mean when I say large quality.

It looks like the set of 'Breaking Bad' but instead of meth it's yummy fish!

Congrats on getting that Adventure.

They sure do haul. Throw on some thigh straps and they are very manageable in the surf as well

BTW stickers make your boat go faster and catch more fish. Everybody knows that!

I saw this fact on the internet so it has to be true.

  That's some serious filleting going on.Does your plant send them to retailers once you've got em packed ?

   Looks like they are already gutted and beheaded--so you don't get any roe..too bad.

   have fun with your new boat.
Life is short---live it tall.

Be kinder than necessary--- everyone is fighting some kind of battle.

Sailors may be struck down at any time, in calm or in storm, but the sea does not do it for hate or spite.
She has no wrath to vent. Nor does she have a hand in kindness to extend.
She is merely there, immense, powerful, and indifferent

How often do you sharpen your filet knife?

@MC
Those fish are all coming out of Alaska so they came down dressed. During our local sockeye and chum runs we can dress up to 250,000 pounds a day.
@IH
The guys on the line hone their knives every five mins or so. We go through a lot of fillet knives. We change the round knives and band knives on the fillet machine about every 200,000 pounds.

My son worked in the seafood department at Whole Foods and I thought he had filleted a lot of fish but I'm thinking you do more in a day than he did in a week!
