My son worked in the seafood department at Whole Foods and I thought he had filleted a lot of fish but I'm thinking you do more in a day than he did in a week!
Lol ... I used to manage the largest Wholefoods Seafood department on the west coast and I can tell you that we fillet more in a day than he does all year.... maybe by a factor of two or three.
In July we cut at about 30 fish a minute for 14 hours a day seven days a week.

Me personally or the plant? We can run fish up to about 15 pounds headed and gutted through the machine after that we have to hand cut and we slow down to about 5000 pounds an hour.
Me personally .... if I'm going slow it takes me two mins or so

Always cut from the head to the tail ...the only other thing that comes into play is if you are filleting from round or gutted.
I posted a salmon fillet step by step with pictures last year.
I'll search for it.

Always cut from the head to the tail

If you cut against the scales you will soon find yourself with a very dull blade. Especially on rockfish! More good advice from the Pros!
