We have been wanted to do fish tacos... but don't really know the best way to cook the fish... suggestions?

Cut fish fillet into small strips of one to two inches. Set aside in large bowl. Add one half can of Tecate or other Mexican lager beer. And juice of one or two limes. Consume remaining half of Tecate. Add to bowl generous portions of cumin, cinnamon, and salt. Crack another lager. Start consuming it. Get out your food processor. Add to it one half shallot, a quarter clove garlic, one small serrano pepper, one small roma tomato, and a bit of cilantro. Process and add to fish bowl. Stir for even coating, cover, and place in fridge. Wait 1-2 Tecates. Remove from fridge and dip fish portions in whole wheat flour. Dip in beaten egg wash. Dip in mixture of 3:1 wheat flour : cornmeal. Let rest. Heat enough oil to cover bottom of pan. Maybe have a quick Tecate. Shred some red cabbage while you wait. Fry fish until crispy. Add fish to tortilla. Add cabbage and mild shredded white queso. I go sauceless, but that's up to you. I also like those new ancient grain mini tortillas. Add additional Tecates until full.

Yeah deep fried is best, but you can bake, grill etc and they are tasty too.  Can't go wrong with Ling cod.

Guess I could send along a recipe.  We try to cook seafood outside most of the time.  On the grill get some foil, add some butter, garlic and season salt of your choice, wrap foil and grill till done, 8-12 minutes usually.  Same way works in oven, quick and easy a pretty good, you can add some cayenne or other spice, Jalapeno wrings, a few lemmon wrings are nice on top, but too much can curdle the butter.

Ahhhhh fish tacos. Eating is a big reason I fish. LOL. An added plus for us is, we call em Baja tacos, is to mix mayo and sour cream 1/2 and 1/2 stir it up with a squeeze of fresh lime in the mixture ...... sure to be a hit and your salsa or whatever else, gives a lil punch.... and others will ask what is that ???????
