Check out the wenoka tanto tip squeeze lock titanium knife it us what I run. Fairly small blunt tip and completely rust free after 3 or so years.

I prefer to use a singular knife.  It gets constant inspections, sharpened when needed, and is familiar when needed,

I loose small things in the kayak. Like knives. I can loose my bait knife and just be out 6 bucks. Loosing my rescue knife could be a lot worse.

I went with a NRS Pilot. I am not scared of puncturing the boat. It's the drysuit that tends to have accidents. Blunt tip is one less worry.

Sure it can rust, just not as easily other metals. 
Titanium Oxide is essentially a form of rust (corrosion). 

It is very bright reflective white soft powdery substance, and is used for all kinds of things as a pigment. 
Think sun screen and you're there!
 
The upside is that in temperatures that us humans survive in, it would take a LOOOOOOOOOOOOOOOG time to notice it on a knife.
However with some creative science, we can speed this process up.  8)

Since you're getting all nerdy on me:  Technically, titanium cannot rust, as rust is specifically defined as iron oxide.

It's a really great metal for kayak fishing, except for the cost.

That was flu meds talking (NyQuil).  I have imported the flu from NY.  I just spent 2 months there working hurricane Sandy from Staten Island to Far Rockaway Beach and it would not hurt my feelings if I never went back to NY.   I spent 4 months there last year due to hurricane Irene.  ...and I did have the flu shot.

If gastrointestinal symptoms are involved it could be noro-virus. Highly contagious up to 10 days after symptoms are no longer present.

When purchasing my licenses this year I forgot my invasive species permit. Upon my return trip, standing in line at Freddy's customer service a mother and her cute little 3 year old girl came in with a hacking cough and strings of snot running down her face. She then puked on my shoes.

I felt so awful for the little cutie and the FM employee who had to clean it up.

If you are in a bad way, please do what you can to limit exposure to others. I've always admired Japanese and other Asian cultures that wear surgical or particulate masks. I always thought they were trying to avoid getting ill, turns out that they are already feeling under the weather and they're doing what they can to limit exposure to other people. Polite people are cool!

I carry two knives on my Revo.  One is a Kershaw Sea Hunter pointed 3-3/4" half serrated stainless blade with cord cutter.  I screwed the kydex sheath to the screws on the bottom of the left mesh pocket so it's a boat/bait/fish knife sharpened often.

On my PFD I carry a Wenoka Titanium Big Squeeze, with 4-1/2" 5/6 serrated titanium blade with cord cutter and tanto tip.  Love it and it rarely comes out.

I've got 3 knives - one on my 15 year old original Leatherman tool, a cheapo bait knife, and a SS Wenoka Squeeze Lock that I keep on my PFD.

I keep my Leatherman tool tied to my yak at all times - even during transport - and it rides in my mesh pocket. I WD-40 it pretty regularly, and scrub the occasional rust spots off. I find it almost indespensible.

The cheapo bait knife - I think it is a Danielson - is what I use for the usual chores, mostly gill cutting. (I have a set of braid snippers on my PFD.)

The Wenoka is only for emergencies. Its locking mechanism is very solid, but easy to remove left or right-handed. I WD-40 it regularly too, and it is spot free.
